Likety-Split Small FryAn even easier way of skipping the frying pan with tasty results is this grill recipe especially suited for a mess of small fish. 4 to 8 1/2- to 1-pound trout, cleaned Thoroughly oil a hinged barbecue basket grill. Rinse cleaned whole fish in cool water and pat dry inside and out. (Use a sealable plastic bag for this next step to save cleanup.) Pour dressing into and over outside of each fish. (For best results, use a dressing made with good quality oil, like Newman's OwnTM.) Leave fish in marinade for up to an hour if you have the time. Place fish in basket grill with a little space between fish. Grill over hot coals for about 7 to 10 minutes per side (less if they are very small fish) or until flesh appears opaque and fish flakes easily. While the fish are cooking, baste with leftover marinade from time to time. When fish are cooked, lift side of grill carefully, loosening any skin stuck to the grill with a tip of a knife.
