Fresh Lemon Trout

A delicious alternative to pan-frying your catch is this fresh lemon treatment for grilled trout.

4 1-pound trout, cleaned
Salad oil
4 lemons
Salt and pepper

Thoroughly oil a hinged barbecue basket grill. Rinse cleaned whole fish in cool water, and pat dry inside and out. Generously salt and pepper cavity of fish. Save the rest of the lemon wedges to serve with the fish.

Generously rub each fish with oil, and sprinkle generously with salt and pepper. Place fish in basket grill with a little space between fish. Grill over hot coals for about 7 to 10 minutes per side or until flesh appears opaque and fish flakes easily when tested with a fork. When fish is cooked, lift side of grill carefully, loosening any skin stuck to the grill with the tip of a knife.
